Meat Literacy Workshop Series

BEEF: March 6th, 10am-1pm

PORK: March 13th, 10am-1pm

SMALL RUMINANTS: March 20th, 10am-1pm

All sessions are free and will be held at at the Berkshire South Community Center

Each workshop will have five areas of focus:

  • Intro to butchery terminology and the cut familiarity

  • Understanding basic meat cooking terminology and which cooking methods are best suited for which cuts

  • Understanding of yields and carcass assessment

  • Intro to meat processing regulation

  • Discussion of cut sheets strategy and how to improve your relationship with your processors.

Participants will walk away from the workshops with meat cutting diagrams, a written basic intro to butcher and meat cooking terms, and a primer on meat processing regulations.

I will be leading this workshop series. More about me: I work at BAV on improving our regional livestock systems. I have worked in a variety of capacities as a butcher and have traveled around the country teaching workshops on meat processing as The Roving Butcher.
